Soft-Shell Crab

Soft-shell crabs are one of America’s favorite seafood delicacies. While all crabs shed their shells to grow, only a few species of crab can actually be eaten in this form. The blue crab is the only commercially available soft-shell product. The soft-shell is the blue crab in its molted state.
Timing is everything. Once molting starts, there are only a few hours before they begin growing another hard shell. To prevent this, they are caught just prior to losing their shells and closely monitored in holding tanks until the molting is complete. At that time they are whisked from the water and either frozen immediately, or packed in wet paper or straw and shipped live.
Once molting is complete, most of the crab is edible. They are succulent and juicy.

NOTES FROM OUR BUYER

Crawfish

Crawfish production is still strong considering the flooding throughout South West Louisiana. We expect prices to hold this week. We also have domestic crawfish tail meat available.

There are several halibut landings this week, and availability and pricing are looking good. Call your sales rep today to place an order.

Mahi

We are starting to see some relief on Mahi pricing.  For the next month domestic mahi will be in season, and that is helping to lower the prices.

New fish just in from Galveston, TX. Whole fish ranging in size from 1-2, 2-4, and 4-8.

We have Fresh Crabmeat out of Mexico & Venezuela this week. Fresh Domestic Crabmeat is available as well.  Call your sales rep today for pricing and availability.

Littleneck Clams and Pei Mussels are in good supply this week.

Icelandic Cod

Availability is looking good this week. We have shipments arriving twice a week.

Arctic Char is a unique strain of saltwater char sustainably farm-raised in Iceland. Often compared to salmon and trout, Arctic Char has a distinct, sweet buttery flavor and firm pink flesh that sets it apart from other fish on the market.

We have a great selection of oysters this week. Make sure you are on our East Coast oyster list that we send out every week.

Gulf sack prices are holding steady with a good supply. We are also seeing a good supply of gallons with most of our oysters coming out of Texas.

The availability on jumbo sized redfish (2.5-3lb) continues to be limited   Extra Jumbo (3lb and up) are in decent supply and will be more available than the smaller sizes. Striped Bass is a great option this time of year as well.

The fisherman strike in Chile is still not resolved.  The pricing on the Chilean Salmon that is available is higher.  We are also seeing higher prices on Canadian and North Sea Salmon. If you would like to read more about it, please check the following website, http://phys.org/news/2016-05-chile-fishing-crisis-tourists.html

Wild Salmon
We are starting to see some Troll Caught Kings available, although prices are high. Fishing will start around May 16th for Copper River Salmon according to the Alaska Dept. of Fish and Game. More info can be found at http://www.adfg.alaska.gov/index.cfm?adfg=commercialbyareacopperriver.salmon.

Tuna availability is looking good, with prices coming down. We will have great 2+ and #1 fish arriving this week.

We have some beautiful Black Drum out of Hackberry, LA. Great blackened, fried, baked, grilled, or any way you choose. Get with your sales rep for an order, this fish sells fast!

Seabass

We have a variety of seabass sizing options.  We continue to carry H&G 20-30 kg as well as a smaller 10-20 kg if that is more of what you’re looking for. Prices are continuing to move up.

Swordfish availability is looking good.  Prices are holding steady.

The larger sizes of the Ruby Trout are more available than they have been.  For the next few months 8-10 oz and 10-12 oz  Ruby will be available, but limited.

The rainbow trout supply seems to be stable.  The variety of the cuts and sizes of this fish never cease to amaze me.  There are many options to meet your menu specifications.

The All Natural Ocean Trout (Steelhead) is an amazing sashimi quality ocean trout with a higher fat content then salmon and a great flavor that lends itself to any type of cooking or smoking.
